Nielsen Family Farms donated a variety of squash to Minden Public Schools for the month of October’s Farm to School program. Food service staff has enthusiastically incorporated the generous donation into the daily school menu.
Minden has participated in the Farm to School program that utilizes local food sources for many years, but this is the first year squash has been among the fresh produce they used. Food Services Manager Shelia Sanford said the produce has been easy to incorporate into the menu as the vegetable component of each meal.
Students were given the chance to try roasted butternut squash during one meal and spaghetti squash salad at another. Sanford uses internet recipes to find interesting ways to prepare the vegetables to make it appealing to students and still maintain the nutritional benefits the vegetable offers.
